Skradin risotto is a local dish that is one of the finest traditional meals of Dalmatian cuisine. The known ingredients are regular ones that are used on daily basis, but the secret of this fine dish is the preparation length. The exact recipe is a well-kept secret, and only a handful of Skradin families and restaurants have it. What is known is that it has to be cooked from 8 to 10 hours, and prior to that, broth has to be made and that alone takes the whole day. Only the finest veal is used that is cooked until it starts falling apart and it is traditionally prepared by men only. Famous Antony Bourdain included this meal in the episode of his show where he visited Croatia and was very delighted by it. It is no wonder when you consider that up to five different types of meat can be used in preparation. It is also not available in restaurants during the entire year, as it is prepared for important feasts and holidays. One of them is Labour day (May 1st) so spending time in Skradin at that time of year is great opportunity to try this delicious meal.
